Barbecue Bacon Wrapped Shrimp

Served as a grilled appetizer or main course,
this easy recipe for barbecued shrimp is good.
Just a few simple ingredients an easy recipe.

Ingredients:
1 1/2 pounds jumbo shrimp, peeled and deveined
4 tablespoons apricot jam
2 teaspoons lemon juice
24 slices smoked bacon

Directions:
Preheat the grill.
If using wooden or bamboo skewers,
put them in cold water to soak.
In a mixing bowl large enough
to hold all the shrimp,
stir together the apricot jam, lemon juice.
Add the shrimp, stirring and tossing to coat.
In a large nonstick skillet,
arrange the bacon strips in a single layer,
Place the skillet over medium heat and cook,
without turning, until the edges of the bacon
just begin to curl, 2 to 3 minutes.
Transfer bacon to paper towels,drain,cool.
Place a shrimp at the narrower end of
each bacon slice and roll it up.
Slide the shrimp onto a skewer,
passing the skewer securely through
the ends of the bacon on each side of the shrimp.
Continue, placing six shrimp on each skewer
and leaving a small gap between the shrimp.
Place the skewers on the grill and cook,
turning them once, until the bacon is crisp
and the shrimp are plump and pink,
8 to 10 minutes total.
Serve on the skewers or, using a fork,
slide the shrimp off the skewers to plate.
