Butter Corn and Cream

This is a tried and true southern recipe.
Fresh corn, fried in butter with cream.
So very good, Nothing like fresh corn!

Ingredients:
3 cups fresh corn niblets removed from the cob (6-8 ears)
1 stick unsalted butter
1 tablespoon minced bell pepper (green) Optional
Salt and freshly ground pepper to taste
16 ounces half-and-half

Directions:
Melt butter in a 12-inch skillet
Add corn, bell pepper (if using), salt, and pepper
Stir and cook for 5 minutes
Do not overcook
Add half-and-half and reduce heat to simmer
When cream has cooked away, about 7-10 minutes.
Serve hot
