I named this after the Chernobyl Russian
nuclear disaster the year I made this recipe.
This chili recipe is a hot one, really really hot.
I came up with this when I had Rocky's Hot Dogs.
One of the customers "Kyle" claimed
"there's no chili too hot for him".
He took one big old spoonful and quickly grabbed
a whole loaf of white bread stuffing in his mouth.
He had tears in his eyes, and so did I from laughter.
The heat comes from the dried hibanero peppers,
be very careful when using them! No eye contact!
Honestly this is not for the faint of heart.
Ingredients:
1 pound ground beef
1/2 pound ground turkey
1/4 cup olive oli
3 large onions, peeled & chopped
2 green bell peppers,chopped
6 plum tomatoes, diced
6 cups water
1/8 cup granulated sugar
1/8 cup dark brown sugar
1/8 cup apple cider vinegar
2 tablespoons salt
1 small can white kidney beans
1 small can red kidney beans
1 small can pinto beans
1 small bottle red hot pepper sauce
6 dried hibernia chili peppers,chopped
cayenne pepper, just for the fun of it
Directions:
Put oil in a big pot on high heat.
Brown ground beef, turkey and cook through.
Add onion, green bell pepper, tomatoes and water.
Add sugars and beans, heat through stirring often.
Add vinegar, salt and the hot sauce.
Now being very careful not to touch
these peppers the wrong way,
you might consider using gloves,
take the hot hot hibernia peppers
and put them in a food processor.
Blend until all is chopped very well.
add the cayanne pepper and blend some more.
Add the peppers to the chili and stir well.
Cook on low heat a good hour or more, do not boil.
