Ingredients:
1/4 cup butter, divided
2 Tbsp all-purpose flour
1 cup milk
1 cup Parmesan cheese, grated
2 Tbsp fresh tarragon, chopped
1 Tbsp paprika
Salt and Pepper to taste
1 pound dungeness crabmeat
1/2 cup green onions, chopped
1/2 cup breadcrumbs
Directions:
Heat oven to 400 degrees F.
Grease medium casserole pan, set aside.
Melt half of the butter in a
medium saucepan over low heat.
Whisk in flour and cook for
3-4 minutes, stirring constantly.
Whisking constantly, slowly add milk
and cook for 3-4 minutes longer.
Remove from heat.
Stir in Parmesan cheese, taragon,
paprika, and salt and pepper to taste,
gently fold in crabmeat and green onions;
scrape into prepared casserole.
Sprinkle top with breadcrumbs
and dot with reaining butter.
Bake for 30 minutes or until lightly browned.
