This eggnog cookie recipe is just
about the best cookie recipe
I've ever come up with,
they taste just like a cup of
rich,creamy and crunchy eggnog.
I wonder if some whiskey could be added here?
Eggnog cookies ingredients:
1/2 cup white granulated sugar
1/4 cup confectioners sugar
1/2 stick butter, 4 Tablespoons softened
1/4 cup shortening
1/2 cup grocery store bought eggnog
1 tsp real vanilla extract
2 egg yolks
2 cups flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
2 cups chocolate chips
1 tsp ground nutmeg
Pre-heat oven to 350°F
In a bowl mix flour, baking powder salt and cinnamon.
In another bowl (I use a kitchenAide mixer)
cream sugars shortning and butter together until really smooth.
Add egg yolks, vanilla and eggnog and beat at medium speed
until all the ingredients are well incorporated.
Add the flour until it’s incorporated to the mixture.
Fold the chips into the batter.
Drop by teaspoonfuls 2″ apart on a parchment paper lined cookie sheet. Sprinkle some nutmeg on top of each cookie and bake for 10 to 12 minutes. Remove from oven and slide the cookies on the parchment paper off the cookie sheet to cool, I slide them onto todays newspaper just because.
