Verjuice is a tart liquid made from crab apples
and compliments the licorice flavor of fennel.
Ingredients:
1 fresh fennel
1 garlic cloves
1 tablespoon olive oil
1 cups verjuice
1 cups chicken stock
1 sprig fresh Thyme
Salt and sugar
black peppercorns
1 tablespoons butter
1 tablespoons sugar
Directions:
Trim fennel then slice
directly in half the long way.
Cook the garlic cloves in olive oil.
Deglaze pan with verjuice and chicken stock.
Add the fennel, thyme, salt, sugar,
and peppercorns.
Cover with parchment paper
and braise until tender.
Drain, cool and serve.
