Fried Eggplant

Eggplant is good when prepared this way,
Browned, crunchy and sprinkled with a little salt.

Ingredients:
1 eggplant
1 egg,beaten
1/2 cup milk
1 cup flavored breadcrumbs
1 cup flour
olive oil for frying
salt

Directions:
Cut skin off eggplant and slice in 1/2 inch slices.
Combine egg and milk creating an eggwash,
Three seperate bowls, one for eggwash,
one for flour and one for breadcrumbs.
Dredge eggplant slices one at a time in flour
then eggwash and then breadcrumbs.
When oil is hot enough add breaded eggplant to frypan.
Do not crowd and make sure you use enough oil.
Fry on one side until brown then turn and fry other side.
drain on paper towels sprinkle with salt right away.
keep warm in oven until serving.
