I make these at least once each year in the
summer time before the tomatoes get ripe.
Ingredients:
4 green tomatoes,sliced 1/4 inch thick
1 garlic clove,minced
1 small onion,minced
1 teaspoon dried oregano
1/4 cup flour for dredging
olive oil for frying
salt and pepper to taste
Directions:
In bowl combine tomatoes,garlic,
onions, flour and pepper, mix good.
Heat oil in frypan.
When oil is hot enough shake off excess flour
from tomato slices and place tomatoes in pan.
Fry until they turn soft,turn and fry other side.
Remove to paper towels to drain,
salt and pepper to taste.
