Home Made Pasta

This is real easy to make and is a
refreshing change from the dried pasta.
It takes a little work but if you've got
a pasta rolling machine it's a snap.
This home made pasta only takes
about three minutes to cook.
It's really good with fresh basil
and extra virgin olive oil.

Ingredients:
2 1/2 cups flour
1 teaspoon salt
2 eggs, beaten
1/3 cup cold water
1 teaspoon olive oil

Directions:
In a large bowl mix the flour and salt.
In another bowl mix the beaten eggs,water and oil.
Make a well in the center of the flour,add egg mixture.
Mix well,spread some flour on a work surface.
Turn out dough and knead until it gets smooth and elastic,
cover and let rest 15 minutes.Divide dough into fourths.
On a floured surface roll out
pieces of dough to 1/16 in thickness.
Cut with pasta cutter or pizza knife.
Let dry at room temperature for 30 minutes.
Cook in salted boiling water for
three minutes or done to your likeness.
