Basic Polenta

Polenta is corn meal mush or grits down
in the southern American States.
I like it a lot and have been trying
to find tasteful additions to it.
It's good fried in butter.

Ingredients:
3 cups water
1 cup corn meal
1/2 teaspoon salt
1 tablespoon butter

Directions:
Bring 2 cups water,butter and salt to boil,
add the corn meal to the remaining cold water
mix well, then add it to the boiling water stirring well,
when the polenta comes back to the boil turn off heat.
Stir on the warm burner for 10 minutes to thicken.
Pour into buttered bread pan and
put in the refrigerator overnight.
Take polenta out of pan and cut into strips,
fry in butter.
