Mandarin Orange Cheesecake is a gift from God.
This recipe makes a cheesecake so good it's sinful.
I've made this a few times with good results.
I think that the next time I make this
I'll add some sweet red cherries to the batter.
Ingredients:
Crust:
1 cup graham cracker crumbs
3/4 cup almonds, toasted and ground
1/4 cup unsalted butter, melted
Filling:
3 packages (each 8 ounces) cream cheese, softened
1/2 cup unsalted butter, softened
1 cup granulated sugar
4 eggs
1/2 cup sour cream
1 teaspoon vanilla
1 10 ounce can mandarin orange segments, drained
Topping:
1-1/2 cup sour cream
2 Tablespoons granulated sugar
2 Tablespoons fresh squeezed orange juice
Directions:
Preheat oven to 350 degrees.
Take a 9-inch pie pan, ungreased,
In a medium bowl, combine graham cracker crumbs,
almonds, and butter.
Press into bottom of cheesecake pan
place pan in freezer and freeze.
In a mixing bowl beat cream cheese,
butter and sugar until very smooth.
Add eggs, one at a time,
beating after each addition.
Stir in sour cream, orange juice,and vanilla.
Fold in mandarin orange segments by hand.
Remove pie crust from freezer,pour cream cheese batter
over frozen crust, smoothing out to sides of pan.
Bake in preheated oven until top is light brown
45 to 55 minutes. Let cool on the counter
for 10 minutes,the cake will sink slightly.
Cover with plastic wrap and refrigerate
for at least 6 hours before serving.
Use a warm wet knife for easier cutting.
