Mussels don't need anything to make them taste great
but I came up with this recipe as a change of pace.
Ingredients:
2 pounds mussels
1 large onion, diced
2 Tbsp garlic, minced
2 Tbsp olive oil
1 cup white wine
8 oz can diced tomatoes
1 Tbsp dried basil
2 Tbsp fresh parsley, chopped
Directions:
Sauté onion in olive oil until soft,
add garlic and sauté 2 more minutes.
Add wine, tomatoes, basil
and parsley and simmer 10 minutes.
Add mussels, cover and cook
until all mussels have opened.
Serve as is with a warm baguette
or over your choice of warm pasta.
