I used to buy these Frozen potato skins
in the freezer section of the grocery store.
They stopped selling them so I made this recipe.
Ingredients:
5 baked potato skins, cut in half
1 tablespoon melted butter
1 onion, peeled and diced
1/2 cup fried bacon, diced (about 5 strips)
3/4 cup cheddar cheese, shredded
salt to taste
Directions:
Heat oven to 375F.
Microwave whole potatoes on high power
until cooked but not to cooked.
Let potatoes cool and cut in half.
Remove some of the potato to make a boat.
Brush potato shells with melted butter
and sprinkle salt to taste
Place on baking sheet and bake for 15-20 minutes
until crisp but not dry and hard.
Remove and sprinkle with cheese,
bacon and onion, place back in oven
until cheese is melted.
Serve with sour cream.
