agar agar is a gelatinous substance derived from seaweed.
It's chiefly used as an ingredient in desserts.
I wonder if I can substatute some corn starch.
Ingredients:
2 chicken thighs about 8 oz each
1/2 oz agar agar
1 oz toasted peanuts
2 spring onions
Chicken marinade:
2 tbsp ginger juice
2 tbsp wine
1/3 tsp salt
1 tsp sugar
Seasoning:
1/4 cup stock
3 tbsp oyster sauce
1 tsp sugar
1/4 tsp pepper
1 tsp sesame oil
Directions:
Rinse the chicken thighs with boiling water
and pat dry with a clean towel.
Slash 3 slits lengthwise on
each side and place on to a platter.
2.Mix the marinade thoroughly in a small bowl.
Pour half of the marinade on to one side
of the chicken thighs and turn over the other
side to coat with the remaining marinade.
Leave aside to soak for an hour.
Turn the thighs over every 20 minutes.
Place in a steamer to cook for 12 minutes.
Remove and leave aside to cool.
Tear the flesh into thick strips
of similar size to the agar agar.
Wash the agar agar in
warm water and towel dry.
Cut into 2” lengths and arrange on a platter.
Top with the chicken shreds.
Crush the peanuts.
Wash and dice the spring onions.
Clean a small saucepan and pour
in the mixed seasoning to bring to boil.
Season to taste and scoop on to the chicken.
Sprinkle with the crushed peanuts
and spring onions and serve cold.
