Three Bean Soup

This is a comfort food best served in the winter.

1 tablespoon olive oil
1 onion, peeled,cut in half,thinly sliced
2 cloves garlic,peeled,minced
1 teaspoon ground cumin
1 15 oz can garbanzo beans,undrained
1 can 15 oz. lima beans,drained
1 can 15 oz. black beans,drained,rinsed
1 can 14 1/2 oz. italian style stewed tomatoes undrained
1/2 tsp. salt
3 cups water
2 tablespoons choped fresh parsley

Directions:
Heat oil in pot over medium high heat.
Cook onions,garlic and cumin 4 to 5 minutes,
stirring occasionally, until onions are tender.
Stir in remaining ingredients except parsley.
Heat to boiling, reduce heat to low.
Cover and simmer about 10 minutes
or until beans are tender.
Garnish with parsley,serve.
