I made this meat sauce recipe to serve on hot dogs for a local
American Legion selling chili dogs from their booth at the
County fair about ten or so years ago, using 20 pounds of beef.
Here I cut my original recipe down to size for home cooking.
Ingredients:
2 lbs. ground beef,85/15
1 onion, peeled and minced fine
1 tbsp. chili powder
1 tsp. onion powder
1 tsp. salt
1/4 cup water
1 sm. green pepper
4 tbsp. allspice
1 tsp. garlic powder
1 tsp. black pepper
2 tbsp. dry mustard powder
Directions:
In a large pot cook beef down with water
making sure beef is broken up fine while cooking.
When water is evaporated and beef
is cooked through remove from heat.
Place beef in a food processor and pulse to
a fine sauce but not to fine.
Put beef back in pot and add the finely chopped pepper,
finely chopped onion, allspice, chili powder, garlic powder,
onion powder, black pepper, salt, and mustard powder.
add enough water to just cover beef.Mix well to combine.
Simmer on low until all water is evaporated, about two hours.
Remove from pot to an airtight container, refrigerate overnight.
Reheat meat sauce on low heat adding more water if needed.
