I remember making these cookies at a friends house as a kid.
My friends mother would let us place the filling in the dough.
I always liked the black cherry filled ones and do to this day.
2 egg yolks
3 tablespoon butter, melted
3 tablespoon sugar
1 teaspoon vanilla
2 1/4 cup flour
Dash of salt
4 tablespoons water
Sweet Jam or preserves
Directions:
Beat together egg yolks, butter, sugar and salt.
Add vanilla and water. Add flour, stir to make a stiff dough.
Wrap in waxed paper. Chill for 1 hour.
Roll out on lightly floured surface, 1/4" thick.
Cut in 3" circles. Wet edges of circle with water;
place a teaspoon of jam or preserves on cookie.
Fold over and seal edges with a fork, prick top with fork.
Fry in deep fat at 375 degrees until golden brown.
Sprinkle with or roll in powdered sugar.
