This unusual way of cooking bacon turns it into a gourmet treat.
I'd add some Swiss cheese and baby spinach leaves
to this sandwich before it's grilled.
Ingredients:
8 slices bacon
3/4 cup grated Parmesan cheese, divided
1/2 teaspoon dried basil leaves
1/4 cup mayonnaise
8 slices whole-wheat bread
2 tomatoes, thickly sliced
3 tablespoons butter, softened
Directions:
Dip bacon slices in 1/2 cup Parmesan cheese and press to coat.
Place 4 slices of the coated bacon on microwave-safe
paper towels in a 12" x 8" microwave-safe baking dish.
Cover with another sheet of microwave-safe paper towel.
Microwave on high for 3-4 minutes or until bacon is golden brown.
Repeat with remaining bacon slices.
Meanwhile, in small bowl, combine thyme, mayonnaise,
and remaining 1/4 cup Parmesan cheese.
Spread on one side of each bread slice.
Make sandwiches with the cooked bacon and tomatoes,
and spread outsides of sandwiches with butter.
Grill in a hot skillet or in a dual-contact grill
until bread is toasted, then cut in half and serve.
