If you have Caprese leftovers — or if you bought all the ingredients but then the bread got stale — you can make the most addictively delicious main-dish salad in the world. If your kids will be more enthralled if it's called Soggy Pizza Salad, be my guest.
Ingredients:
Half a large crusty baguette, cut into 3/4-inch cubes
2 pounds tomatoes (about 4 to 6), cored and cut into rough chunks
1/2 cup basil leaves, stacked and slivered
1/2 pound fresh mozzarella, cubed
1/4 cup balsamic vinegar
1/2 cup olive oil
1 large garlic clove, pressed
1 teaspoon kosher salt
Directions:
Put bread, tomatoes, basil and mozzarella into large bowl.
In a separate bowl, whisk together remaining ingredients.
Pour enough dressing over the salad to moisten,
toss it together with your hands, and let it sit
for around half an hour to get soggy.
Taste, add more dressing if needed, and serve.
