Caribbean Style Grilled Mahi Mahi

Ingredients:
Marinade:
1 Tbsp. extra virgin olive oil
juice from 1 lime
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper to taste
4 6-oz. mahi mahi fillets, about 1-inch thick

Salsa:
1 medium avocado, diced
1 cup Roma tomatoes,
seeded and chopped
1/2 cup red onions, diced
1/2 cup fresh cilantro, chopped
3 Tbsp. fresh lime juice

Directions:
In a deep, glass dish, combine olive oil, lime juice, salt and pepper.
Add fish, cover with plastic wrap and
marinate in the refrigerator for 20 to 30 minutes.
To make the salsa, in a medium bowl, combine avocado,
tomatoes, red onions and cilantro.
Add lime juice and toss to coat; set aside.
Coat grill rack with cooking spray and preheat to medium heat.
Remove fillets from marinade; discard marinade.
Grill mahi mahi, covered, for 6 to 8 minutes on each side
or until fish flakes easily with a fork. Serve with salsa.
