Country Style Italian Sausage and Potatoes

Ingredients:
1 pkg. Italian sausage, hot or mild
2 tsp. olive oil
3 large garlic cloves, peeled and sliced very thin
1 lb. (about six) fresh, roma tomatoes
or 14.5 oz. can stewed tomatoes, Italian flavor
3-4 small red potatoes, cut in thin slices
6 bay leaves, cut in half (optional)
1/4 tsp. salt and 1/8 tsp. black pepper
2 tsp. Italian seasoning (omit if using stewed tomatoes)

Directions:
In a microwave safe bowl, combine potatoes and 1 cup of water.
Microwave of high for 5 minutes. Pierce the sausages
in various places with a fork or toothpick.
Put the sausages in a skillet with the oil and garlic.
Brown on medium heat. Wash and chop the tomatoes (if using fresh).
Add tomatoes, potatoes and seasonings.
Cover and cook over medium-low heat for about 30 minutes
or until potatoes are tender and sausage is cooked thoroughly.
Internal temperature of sausage should be 170 degres F.
Remove the bay leaves before serving.
Serve with green beans, Italian bread and a tossed salad.
