Smoked Sausage with Apples and Cabbage

Ingredients:
1 lb. smoked sausage
1 tsp. olive oil
4 cups shredded cabbage and carrots
2 medium tart apples, peeled, cored and cut in 1-inch chunks
1 cup apple cider
1 Tbsp Dijon mustard
1/4 tsp. black pepper

Directions:
Cut sausage into 1/2-inch slices.
In a heavy, large nonstick skillet,
heat oil over medium-high heat.
Add sausage and brown for 4-5 minutes, stirring occasionally.
If necessary, drain fat.
Add slaw mix, apples, cider, mustard and pepper.
Immediately reduce heat to low.
Gently simmer for 10 minutes, stirring occasionally.
In 4 shallow soup bowls, portion each serving atop cooked rice.
