Crispy Pork Chops

Breaded, broiled and crispy.
it also has a wonderful tangy taste.
kids seem to love these.

Ingredients:
4 pork chops, 1-inch thick
1 egg, beaten
1 cup bread crumbs, seasoned.
3 Tbsp, olive or canola oil
1 Tbsp red wine vinegar
3 Tbsp lemon juice
1/2 cup grated parmesan cheese
1 Tbsp Dijon-style mustard
1 clove garlic, minced
1/2 tsp cayenne pepper
1/4 tsp crushed red pepper
1 tsp each of dried basil & thyme
Fresh parsley, for garnish

Directions:
Preheat broiler. Cut excess fat from chops.
Bread chops in the egg and then breadcrumbs, coat well.
Using cooking spray, spray a broil rack.
Place chops on rack and broil 8 inches away from heat for 10 minutes. Lower rack if necessary, making sure to not burn the breadcrumbs.
In bowl, combine oil,vinegar,lemon juice,
cheese, mustard, garlic, peppers, and herbs.
Spread half the sauce over chops. Continue to broil 5 minutes.
Carefully turn chops over, spread sauce on chops and broil 5 minutes. Check for doneness. Breading should be very crisp and golden brown.
