When our peach tree gets ripe with fruit it GETS ripe with
tons of the ripest peaches you'll ever find on the planet.
I came up with this recipe for fresh peach salsa.
This salsa is cool tangy and tasty on tortilla chips.
Bet ya can't say that three times fast!
Ingredients:
4 fresh peaches, chopped about 2 1/4 cups
1/2 cup orange marmalade
1/2 cup thinly sliced red onions
2 Tbsp. red wine vinegar
1 Tbsp. extra virgin olive oil
1 tsp. grated fresh ginger
Directions:
In medium bowl, combine all ingredients.
Refrigerate until ready to serve. Makes 3 cups.
