Chutneys usually need long simmering times on the stove.
but this chutney is made in the microwave in 25-30 minutes.
Ingredients:
3 fresh nectarines, cut in 1/2"" chunks
1 onion, coarsely chopped
1/2 cup packed brown sugar
1/2 cup golden raisins
1/4 cup cider vinegar
1/2 tsp. chili powder
1/2 tsp. allspice
1/2 cup coarsely chopped almonds
Directions:
In 2-qt. glass dish combine all ingredients except almonds.
Microwave on high 25-30 minutes, stirring every 5 minutes,
until mixture is very thick and fruit and onion are tender.
Refrigerate until chilled. Stir in almonds before serving.
Refrigerate leftovers.
