Gherkins Pickles flavor this updated version
of an old time favorite German potato salad.
The dressing can be made up to two days ahead
and stored, refrigerated, in an airtight container.
Ingredients:
4 lbs potatoes
salt
1/4 cup red wine vinegar
1 tablespoon sugar
1/2 cup sour cream
1/2 cup mayonnaise
1 teaspoon celery seed
Freshly ground black pepper to taste
3 Gherkin Pickles, thinly sliced or finely chopped
1/4 cup chopped red onion
1/2 cup fresh flat-leaf parsley, chopped
Sweet smoked paprika for garnish
Parsley for garnish
Directions:
Peel potatoes and cut into walnut size pieces.
Place potatoes in a large pot,
fill pot with enough cold water
to cover potatoes by 1 inche.
Add salt; bring to a boil.
Reduce heat, and let simmer until potatoes
are just tender when poked with a fork,
about 30 minutes, remove from heat, drain.
Let potatoes stand until cool.
In a medium bowl, whisk together the vinegar,
sugar, sour cream, mayonnaise and celery seeds.
Season to taste with salt and pepper.
Cut potatoes into bite size pieces,
and transfer to a serving bowl.
Pour dressing over the potatoes.
1Add chopped Gherkins, onions,
and parsley, toss to combine.
Adjust seasoning of salt and pepper,
garnish with parsley and paprika,
serve at room temperature.
