This rockfish is well seasoned
and makes a great presentation.
Ingredients:
1 1/2 lb fresh rockfish
1 tbsp mayonnaise
1 tbsp lime juice
2 tbsp sugar
2 tsp honey Dijon mustard
1 tsp dill
Pinch of black pepper
1/4 cup Italian style bread crumbs
1/4 cup pistachio nuts, shelled and crushed
2 tsp butter
Directions:
In a large bowl, combine the mayonnaise,
lime juice, honey mustard, and dill.
In a bowl combine bread crumbs and crushed pistachios.
Spread the mayonaise over the rockfish fillets
and place on a broiling pan.
Sprinkle fillets with black pepper
and pistachio bread crumbs.
Dot fillets with butter.
Broil for about 12-15 minutes
or until fillets are golden brown
and flake easily with fork.
