Marinara Flounder Fillets

Ingredients:
1 lb flounder fillets
2 tsp olive oil
1 10-oz package sliced baby bella mushrooms
2 cups marinara pasta sauce
1/2 tsp black pepper
1/4 cup shredded Parmesan cheese

Directions:
In a large, heavy non-stick skillet,
heat oil over medium heat.
Add mushrooms, cook until lightly brown.
Transfer to a bowl and keep warm.
Add marinara sauce to skillet
and place fish on top of sauce.
Sprinkle fish with black pepper.
Press fillets into sauce so
fillets are entirely covered.
Cover skillet with a tight fitting
lid and bring to a simmer.
Reduce heat to low and simmer
8-12 minutes or until fillets are opaque.
Using a pancake turner or spatula,
carefully lift fish from skillet
and serve in 4 shallow bowls.
Spoon mushrooms a top fish
and sprinkle each with cheese.
