Monkfish with Tomato Basil Sauce

Simmered Monkfish with Tomato Basil Sauce
is a very affordable dish. Delicious simple,
and easy recipe. Can be ready in 35 minutes.

Ingredients:
1 pound monkfish fillets, about 1 inch thick)
1 pound pasta
2 tablespoons olive oil
1 cup onion, chopped
1 teaspoon garlic, fresh, minced
4 cups tomatoes, seeded and chopped
1 teaspoon dried basil
1/3 cup red wine
1/4 cup fresh basil leaves, minced
1/4 teaspoon ground pepper
1/2 teaspoon salt

Directions:
1.In a large skillet, saute onions and garlic in olive oil.
2.Stir in tomatoes, dried basil,
salt and pepper and simmer for 15 minutes.
3.Stir in monkfish and wine, and simmer for 3 minutes
or until monkfish flakes easily when tested with a fork.
4.Add fresh basil to sauce and serve over hot pasta.
