Old fashioned vegetable beef soup,
a recipe made with beef shanks,
green beans, potatoes, and barley or rice.
Ingredients:
3 to 4 lbs beef shanks
2 tablespoons bacon drippings
2 quarts cold water
1 teaspoon salt
1 small onion, peeled and chopped
1 can (15 oz) tomatoes, diced
6 sprigs parsley
5 carrots, peled and sliced
2 cups fresh green beans, cut
1 cup diced potatoes
1/2 cup chopped celery
1/4 cup rice or barley
Directions:
Brown meat in drippings. Pour off excess fat.
Cover with water; bring to the boil.
Add salt and onion; simmer 2 hours.
Add vegetables and rice. Simmer for about 1 hour longer.
Remove meat from bone; add back to soup.
