Polynesian Yam Casserole

Delicious old time yams with a Polynesian flair,
that is what this recipe is. The addition of pineapple
and coconut really makes this dish stand out.

Ingredients:
5 large sweet potatoes, peeled
and cut into 1 inch thick slices
1 cup water
1/2 cup dark brown sugar
1/4 cup honey
1 tablespoon lemon juice
1 teaspoon cinnamon
1 cup canned pineapple tidbits
1 cup flaked fresh coconut

Directions:
In a medium saucepan, combine sugar, brown sugar, lemon juice, water, honey, cinnamon and ginger. Heat just until it comes to a boil, stirring frequently. In a large microwave-safe casserole, place all of the peeled, sliced sweet potatoes. Cover with the liquid mixture. Cook on high for five minutes. Stir the contents of the casserole then return to the microwave. Cook on high for five more minutes. Stir well, using caution not to break the sweet potatoes, if possible. Next, add the pineapple and stir carefully, return to the microwave and cook on high for 8 minutes. Remove from microwave. Place on heatproof pad, stir carefully and cover. Keep warm. When ready to serve, sprinkle the coconut evenly over the sweet potato mixture.
