Ingredients:
1 to 2 cups dried black eyed peas (2 cups for 4 people)
1/2 medium onion
2 slices bacon, uncooked
1 teaspoon garlic powder
1 teaspoon white vinegar
1/2 teaspoon sugar
1 teaspoon salt
1 teaspoon black pepper
dash tabasco hot sauce (optional)
Directions:
Combine all ingredients in a large pot
and cover 2-4 inches with water.
Bring to a boil and simmer until
peas are tender (about 45 minutes)
Note: Watch closely that the peas
do not get dry. They will burn quickly.
Taste peas before removing from heat
and add salt, pepper or garlic to your taste.
