Stovetop Raisin Rice Pudding

Ingredients:
1 cup enriched rice
2-3/4 cups Skim milk
1/4 cup raisins
1/3 cup sugar
1/8 tsp. salt
1/4 tsp. Cinnamon
2 eggs, beaten
1/2 tsp. Vanilla

Directions:
In a 3 quart pot, bring rice, milk, raisins,
sugar, salt and cinnamon to a boil.
Reduce heat to low, cover and cook 25 minutes or until rice is tender. Beat eggs in a bowl. Slowly add to rice mixture stirring constantly.
Blend in vanilla and chill. Serve with milk for thinner consistency.
For brown rice, use 31/2 cup of milk and cook for 60 minutes.
