Soft Oatmeal Raisin Cookies

A lower fat, higher fiber cookie for a nutritious snack.
Serve with a cold glass of fat free or low fat milk!

Ingredients:
3/4 cup sifted Stop & Shop all-purpose flour
1/2 cup Stop & Shop whole wheat flour
1 tsp ground cinnamon
1 tsp baking soda
1/8 tsp salt
1/4 cup soft margarine
1/2 cup Stop & Shop granulated white sugar
1/2 cup Stop & Shop packed light brown sugar
1/3 cup Stop & Shop smooth cinnamon applesauce
3 large egg whites
1 tsp vanilla
1-1/4 cups rolled oats, uncooked
1 cup golden raisins

Directions:
Preheat oven to 350 degrees F.
Line cookie sheets with parchment paper.
In a medium bowl, combine flours, cinnamon, baking soda and salt.
In an electric mixer bowl, using medium speed,
mix margarine and sugars together until blended.
Add applesauce, egg whites and vanilla.
Reduce speed to low and slowly add flour mixture.
Stir in oats and raisins.
Drop in rounded teaspoons, 2-inches apart, onto cookie sheets.
Bake 10-12 minutes or until firm to the touch and light brown.
Cool on cookie sheets for 1 minute;
move to wire racks to cool completely.
