Tomato Cheese Fish Fillets

You can double this easy microwave recipe
to serve four people;
make sure to cook it in two batches
so the fish cooks thoroughly and evenly.

Ingredients:
1 Tbsp. olive oil
1/2 lb. fish fillets
1/4 tsp. salt
dash pepper
2 Tbsp. minced onion
1 tomato, seeded and chopped
1/2 cup shredded Colby cheese
2 Tbsp. grated Parmesan cheese

Directions::
Place olive oil in microwave safe 8" glass
baking dish and arrange fish fillets in dish.
Turn to coat with oil.
Sprinkle with remaining ingredients except cheeses and cover dish with microwave safe plastic wrap.
Microwave until fish flakes easily with fork,
2-1/2 to 3 minutes, turning dish once during cooking.
Sprinkle with cheeses, recover,
and let stand 3-4 minutes before serving. 2 servings
