I make this in spring when I can add some
garden fresh peas to this great recipe.
Ingredients:
1 envelope dry Italian dressing mix
1/4 cup cider vinegar
1/2 pound fresh Italian green beans, cut
1 can (16 oz) chick peas, drained
1 can (7 oz) pitted ripe olives, drained
1 cup sliced celery
1 cup fresh garden green peas
1 small red onion, thinly sliced
1/2 cup mayonnaise
Directions:
In a medium bowl, stir together dressing mix and vinegar.
Add beans,peas,olives,celery,peas and onion, toss to coat well.
Cover and chill overnight. Just before serving,
toss salad with mayonnaise.
