Crispy Parmesan Baked Potatoes

I made these with left over whole baked potatoes.
They were in the refrigerator for a week!
I sliced them up, patted them dry and fried them
in some olive oil, then topped them with cheese.
They got brown, crispy, and potato tasty good!

Ingredients:
1 whole baked potato, sliced
olive oil for frying
parmesan cheese for dusting

Directions:
It couldn't be more simple than this.
Fry the potato slices in olive oil
turn to brown on both sides.
Remove potatoes to drain on paper towels.
Top with some fresh grated parmesan cheese.
