Easy Fresh Vegetable Casserole

This is an easy vegetable casserole dish.
You can add mushrooms, italian seasonings,
or whatever you have on hand, it's a good one.

Ingredients:
1 cup tomatoes chopped
1 cup zucchini chopped
1 cup yellow squash chopped
1 cup spinach fresh chopped (packed)
2 scallions chopped
1/4 cup parmesan grated
1 1/2 cups Milk
3/4 cup Bisquick
3 Eggs
1 teaspoon worcestershire sauce
2 teaspoon Dijon mustard

Directions:
Preheat oven to 400 degrees F.
Place in a casserole dish, tomatoes, zucchini,
squash, spinach, scallions, and cheese.
In a medium bowl, wisk together milk, bisquick,
eggs, Worcestershire, and mustard until smooth.
Pour over vegetables.
Bake about 30 minutes, or until knife
inserted in center comes out clean.
Let stand 5 minutes before serving.
