This is an absolute fantastic recipe.
If you like mushrooms as much as I do,
you will fall head over heals for this.
I recommend allowing the mixture to rest
for 10-15 mintues before shaping
into balls to allow it to hydrate,
though this is not absolutely necessary.
Ingredients:
8 ounces fresh mushrooms, chopped
1 medium red onion, chopped
1/2 cup butter, melted
4 eggs, beaten
2 teaspoons dried parsley flakes
1/8 teaspoon garlic powder
1/2 cup grated Parmesan cheese
2 1/2 cups seasoned dry bread crumbs
Directions:
Preheat the oven to 350 degrees F.
In a large bowl, mix together the mushrooms,
onion, butter, eggs, parsley, garlic powder,
and Parmesan cheese until creamy.
Gradually mix in bread crumbs until the mixture
is stiff enough to shape into balls.
Form into 2 inch balls, and place on cookie sheets.
Bake for 18 minutes in the preheated oven,
until the bottoms are lightly browned.
Arrange on a serving tray and serve hot or warm.
