This salad recipe made with fresh spinach and apples
is not only healthy, but quick and easy to make.
You can make a healthy salad and the dressing
in the morning before leaving for work,
and combine them when your ready for lunch.
To keep the apples from turning brown,
toss them in a little lemon juice.
Ingredients:
1 bag washed fresh baby spinach
2 Granny smith apples, chopped
1/2 cup cashews
1/4 to 1/2 cup mixed raisins
1/4 cup sugar or splenda
1/4 cup extra virgin olive oil
3-4 tbs. balsamic vinegar
1/4 tsp. celery salt
Directions:
Combine spinach, cashews, apples and raisins in a bowl
and toss to combine.
In a separate bowl, whisk together oil,
vinegar, sugar and celery salt.
When your ready for lunch pour dressing on
spinach and apple mix and toss to combine.
serve immediately after adding dressing.
