Fusilli with Tomatoes,
Mozzarella, and Basil

A fine salad with string cheese in it.
The kids really like this pasta salad.

Ingredients:
4 cloves garlic, sliced thinly
1/2 cup olive oil
6 medium tomatoes, diced (or 1 28-ounce can of crushed tomatoes)
Salt and freshly ground black pepper to taste
3/4 cup fresh basil, coarsely chopped (or 11/2 teaspoons dried)
8 ounces fresh mozzarella, cubed
1 pound fusilli (corkscrew pasta)

Directions:
Bring a large pot of salted water to a boil and cook the pasta.
Meanwhile, in a pan, saute the garlic
with 1/4 cup of olive oil until the garlic turns golden.
In a large bowl, combine the tomatoes, salt, pepper,
remaining olive oil, basil, and mozzarella.
Add the garlic. When the pasta is al dente,
drain it well and add to the bowl.
Toss well, taste for seasonings, and serve.
