Gorgonzola Filet Mignon Steaks

Filet mignon is beef tenderloin cut into 1 to 2 inch steaks,
it's a favorite of mine to grill in the summertime.
In this recipe the steaks are pan fried and topped with
a very tasty and flavorful gorganzola cheese sauce.

Ingredients:
4 filet mignon steaks
1 teaspoon butter
1 teaspoon black pepper
1 clove garlic, minced
1 teaspoon dried thyme leaves, crushed
1/2 cup beef broth
1/2 cup dry red wine
4 oz. gorgonzola cheese

Directions:
In a small bowl, combine black pepper, garlic and thyme.
Rub into 4 filets. Heat butter in large heavy skillet
and pan-sear filets turning once, for 5 minutes,
or until desired doneness. Remove to a plate to keep warm.
Add beef broth and wine to the same pan.
Over medium-high heat, bring to a boil and cook for 2 minutes,
stirring to release the brown bits.
Remove from the heat and stir in gorgonzola.
Serve over filets.
