This is a great comfort food
for those chilly winter nights.
A pizza made into a pot pie.
Ingredients:
1/2 pound sweet Italian sausage, cut into 1-inch pieces
1/2 pound hot Italian sausage, cut into 1-inch pieces
2 cups tomato marinara sauce
2 large eggs, divided
1 cup ricotta cheese
1/4 cup grated Parmesan cheese
1/2 cup chopped parsley, divided
1 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper
2 cups shredded mozzarella cheese, divided
1 pound pizza dough, fresh or frozen and thawed
Directions:
Preheat the oven to 350 degrees F.
In a large skillet, cook the sausage until brown. Drain well.
Stir in the tomato marinara sauce.
In another bowl, combine 1 egg,
the ricotta cheese, Parmesan cheese,
1/4 cup of the parsley, the oregano, and pepper.
Spread half of the sausage mixture into a 9-inch baking dish.
Top with half of the ricotta mixture,
half of the mozzarella cheese, and half of the remaining parsley.
Repeat with the layers with the remaining sausage mixture,
ricotta mixture, mozzarella cheese, and parsley.
Roll out the pizza dough to a 10-inch square.
Place the dough over the layered mixture, pinching to seal.
Beat the remaining egg with 1 tablespoon water and brush top of crust. Bake for 30 minutes, or until the top is golden brown
and the edges of the filling are bubbling.
Let stand for 15 minutes before serving.
