Herbed Sugar Snap Peas

This is a great recipe with fresh herbs along
with sweet garden fresh sugsr snap peas.

Ingredients:
3 cups sugar snap peas (or snow peas)
3 tablespoons chopped shallots
1/2 teaspoon vegetable oil
1/4 cup water
1/2 teaspoon salt
1 tablespoon herb butter

Directions:
In a pan over high heat, combine the peas,
shallots, oil, water, and salt.
Toss well and cook for 5 minutes.
Reduce the heat to medium.
Add the butter and continue cooking, covered,
until the peas are tender (about 5 minutes). Serve.
