Celery root and cabbage, braised in a
flavorful broth and seasonings.
I also use fennel in this recipe.
Ingredients:
1 tablespoon olive oil
1 whole onion, peeled and diced
1 bulb of celery root, peeled and sliced
1/2 head of cabbage, diced
1 small fennel bulb, peeled and sliced
1 head radicchio, shredded
2 cups of chicken stock or water
Salt and freshly ground black pepper to taste
Directions:
Pour the oil into a heavy skillet over high heat.
Add the onions, celery root, fennel,and cabbage.
Brown for 5 minutes, stirring.
Add the radicchio and stock or water.
Add salt and freshly ground black pepper to taste.
Cover the pan and simmer over low heat for 20 minutes
or until all of the vegetables are tender.
Adjust seasonings to taste.
