Sweet peppers and lemon juice add a great
depth of flavor to the otherwise
good for you but bland lentils.
Ingredients:
1 cup brown or green lentils
1 sweet red pepper, cored, seeds removed
1 tablespoon chopped fresh mint (or 1 teaspoon dried)
2 tablespoons fresh lemon juice
2 tablespoons olive oil
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions:
Preheat the oven to 375 degrees F. Rinse the lentils well.
In a pot, place the lentils and enough water to cover by 2 inches.
Bring to a boil. Reduce heat to medium-low, cover,
and cook for 20 to 30 minutes, until the lentils are tender.
While the lentils are cooking, roast the red pepper
in the oven for about 15 to 20 minutes, or until soft.
When cool, cut into 1/4-inch-wide slices.
Drain the lentils well. In a bowl, combine the sweet pepper,
lentils, mint, lemon juice, olive oil, salt,
and freshly ground black pepper to taste. Serve.
