Most recipies for roasted asparagus
seem to dry the vegetable out.
Not this one because I use fresh lemon
and a good amount of olive oil in it.
Ingredients:
1 1/2 lbs. asparagus.
1/4 cup olive oil.
2 tablespoons lemon juice
salt to taste
freshly ground black pepper to taste.
1 teaspoon balsamic vinegar.
1 teaspoon sugar
Directions:
Preheat oven to 450 degrees F.
Snap off the tough ends of asparagus and,
if desired, peel the stalks.
In a shallow roasting pan or baking sheet with sides,
toss the asparagus with oil and season with salt and pepper.
Spread the asparagus in a single layer.
Roast for 10 to 15 minutes,
or until tender and browned, shaking once during roasting.
Sprinkle with balsamic vinegar,lemon juice and toss.
Adjust seasonings to taste.
