Sauteed Fresh Escarole

This dish is great to go along with
any roast meat, I like it with pork.

Ingredients:
2 tablespoons olive oil
1 tablespoon minced garlic (3 large cloves)
pound escarole, washed and coarsely chopped
1/4 teaspoon hot red pepper flakes
Salt and freshly ground black pepper to taste

Directions:
Heat the oil in a large heavy skillet.
Add the garlic and sautee until just golden
(about 4 minutes).
Add the escarole. Season to taste with
the red pepper flakes, salt, and pepper.
Cook, stirring occasionally,
until the greens are tender
(about 6 to 8 minutes).
Taste for seasonings.
