These tender chicken breasts are marinated
in a tasty and spicy light yogurt mixture,
which adds a velvety texture to the meat,
serve with a yogurt, cucumber,mint sauce.
Ingredients:
4 boneless, skinless chicken breasts
1/2 cup plain yogurt
1/2 tsp. salt
1/4 tsp. pepper
1/4 teaspoon cayenne pepper
1-1/2 cups plain yogurt
1 cucumber, peeled, seeded, and chopped
5 fresh mint leaves, minced
Directions:
Sprinkle chicken with salt, pepper, and cayenne pepper,
and spread on both sides with 1/2 cup yogurt.
Cover and refrigerate for 1-2 hours.
In a small bowl, combine 1 cup yogurt
with cucumber and mint; mix well and refrigerate.
When ready to eat, broil chicken 6" from heat
for 4-5 minutes on each side until browned
and thoroughly cooked. Serve with cucumber sauce.
