This is one of my best recipes ever!
I can't begin to describe how good this is.
Simply to say you MUST try this one!
You will thank me over and over and over.
Ingredients:
1 celery stalk, chopped
1 onion, peeled and chopped
1 carrot, peled and chopped
1 small butternut squash, peeled, seeded and chopped
3/4 cup basmati rice, uncooked
2 1/2 cups water
2-4 tablespoons olive oil
1 tablespoon real maple syrup
1/2 teaspoon salt
1/2 teaspoon black pepper
lemon juice for garnish
Freshly grated parmesan cheese
Directions:
In a pan heat some olive oil to cover bottom.
Add squash, carrot, onion and celery.
Cook for about four minutes, stirring,
cook just long enough for onion to brown.
Add water and bring to a boil,
cook 5 minutes, and add rice.
Cover and lower heat to a gentle simmer.
Cook for 20 to 30 minutes.
Stir in salt, pepper and maple syrup.
Serve warm with lemon juice and parmesan on the top.
